For generations, the studio has passed down techniques for creating farming tools, household items, and swordsmithing. Since the 1970s, it has also revived and reinterpreted iron lighting fixtures and now creates items that fit modern lifestyles, such as lampshades and sculptural pieces. The eleventh-generation craftsman, Sosuke Kofuji, has drawn upon years of experience to develop the Tanzuki iron frying pan. “As someone entering the iron pan world later than most, I wanted to make something more approachable—something people would use every day,” says Kofuji. Driven by a desire to pass down traditional forging techniques, he has created a pan that is both functional and full of character. Unlike cast iron, which is shaped by pouring molten metal into molds, Tanzuki is made using traditional forging—where iron is heated and hammered into shape, one blow at a time. This process not only makes each piece unique but also strengthens the material by removing oxidized layers and compacting the iron. The craters and dimples left by the hammer resemble the surface of the moon—hence the name "Tanzuki", meaning "forged moon." These slight irregularities help enhance the flavor of food, creating subtle gradients in texture when cooking. Despite the extreme heat and physical demands of the process, Kofuji says, with a smile, “Maybe I’m just naturally heat-tolerant—I can stay in the sauna longer than most.” But he also reflects: “Fire is ultimately something humans can't fully control.
