Seasoning (Medome) Process for Direct-fire Kettle Before first use, please perform the “medome” (sealing) process to reduce leakage, cracks, and unwanted odors. Steps: Rinse the kettle inside and out with clean water. Do not use detergent. Fill the kettle with rice water (the first or second rinse water from washing rice). Heat slowly on low heat until boiling, then keep simmering for about 10–15 minutes. Turn off the heat and allow the kettle to cool down naturally. Discard the rice water, rinse with clean water, and let it air dry. Notes: void sudden heating or rapid cooling during the process to prevent cracking. If you only intend to boil water, medome treatment is not necessary. Simply discard any remaining water from the kettle after each use. After this treatment, the kettle is ready for normal use.
